Dry Patra (also called Dry Alu Vadi) is a classic Gujarati/Maharashtrian snack made from fresh colocasia (arbi) leaves coated with a tangy-sweet-spicy gram-flour (besan) paste seasoned with coriander, chilli, ginger, tamarind, and jaggery. The leaves are rolled, steamed, sun-dried naturally, and packed ready-to-eat. To enjoy: deep-fry until crisp (2–3 minutes), shallow-fry, air-fry, or microwave for 30–60 seconds. Serve as a festive starter, tea-time snack, or side with chutney/yogurt.
We use only seasonal fresh colocasia leaves (never frozen or preserved), traditional gram-flour paste with balanced tangy-sweet-spicy notes, and natural sun-drying by expert women artisans in Surat & Valsad. No preservatives, no artificial colours/flavours — 100% natural, high-protein, high-fibre, and full of intense traditional flavour.
It is ready-to-eat after a quick finish: best results come from deep-frying or air-frying for crisp texture. You can also microwave or shallow-fry briefly. The sun-drying process gives it a unique chewy-crisp texture even before final cooking, but frying enhances the crunch and releases the full aroma.
Dry Patra has a 6–8 month shelf life in vacuum + nitrogen-flushed packaging. Store in a cool, dry place away from direct sunlight and humidity. Once opened, consume within a few weeks and keep sealed to maintain crispiness after frying.
